This is one of the dessert / breakfast dishes that i talked about a few months ago. It's easy, quick and inexpensive.My Sons love them!. I was trying to think of soemthing to do with the remaining cream cheese/sugar/vanilla flavoring mixture that was left over from a cheese cake i had made earlier. This is the result.
For the filling i mix together:
- A box of Philidelphia brand cream cheese that has been allowed to reach room temp.
- 1 cup of sugar
- 4 tablespoons of vanilla flavoring
For the topping i mix together:
- 6tablespoons of hershey's cocoa
- 8 tablespoons of sugar
- 1 tablespoon of vanilla
- 1/4 cup of milk * i use whole milk,you can use any type you prefer* Make sure to mix the chocolate sauce beofre you start cooking,that way it's ready to use as soon as you have taken the last 'crepe' out of your skillet.
For the 'crepes' *pancakes* :) i follow the directions of my favorite pancake mix which is Hungry Jack. After it is mixed i then add enough milk * you can use water if you wish* to get the batter the consistency of a melted milk shake.
Then i put about a tablespoon of cooking oil into the skillet. Use a NON-stick skillet.* i use wesson,but you can use whatever brand you wish*.
I let it heat until a few drops of water will 'dance' upon hitting the skillet. Then pour your batter until it is a size suitable to you.As soon as it starts to bubble carefully fkip the 'crepe' start putting about 4 tablespoons of the cream cheese mixture into the center and carefully spread it outwards.
Then take 2 spoons and use them as tools to help pick up edge of your 'crepe' and use the other spoon to steady it while you roll them up. You could also just 'taco shell' them..that's just fold it over. Once that is accomplished you then put it onto a serving plate to await the rest of your creations to be ready.
After you have cooked all of the 'crepes' you want,then you take the chocolate mixture that you have already mixed and set aside and you 'drizzle' it over the 'crepes'. Put as much or as little of the chocolate sauce you want on top. Also you can use whatever amount of cream cheese mixture that you want inside of your 'crepes'.
